GINGER ALE SALAD 
2 tbsp. Knox gelatin
4 tbsp. cold water
1 c. hot water
3/4 c. sugar
Juice of 1 lemon
1 pt. ginger ale
1 med. can diced pineapple, drained
1 c. fresh fruit (grapes, peaches, oranges, etc.)

DRESSING:

2 tbsp. flour
1/2 c. sugar
2 eggs
3/4 c. pineapple juice
1 1/2 tbsp. melted butter
1 c. whipping cream

Soften gelatin in cold water; add hot water and stir well. Add sugar and juice of lemon. Cool. Add chilled ginger ale; let set until slightly jelled. Add pineapple (drain and reserve juice). Add fresh fruit. Fold in dressing.

Beat together flour, sugar, and eggs; add pineapple juice and mix well. Cook until thick, stirring constantly. Stir in butter; cool. Whip cream and fold into cooled mixture. Serve over salad.
