6 oz. soft cream cheese 1 c. butter 2 c. all-purpose flour 1/4 tsp. salt FILLING: 1 pt. canned mincemeat or 1 pkg. reconstituted condensed mincemeat Prepare pastry: Beat together cream cheese and butter until well blended. Add flour and salt, mixing well with fork and fingers to form soft dough. Refrigerate for at least 1 hour or overnight. Roll small portions of dough with rolling pin to a thickness of about 1/8 inch. Cut with 2 inch round cookie cutter. Place one round pastry cookie on greased cookie sheet. Place 1 teaspoon mincemeat in center of cut out. Rub edges of pastry with water and place second pastry cut ut on top. Seal with tines of fork. Bake at 375 degrees F. for 20 to 25 minutes until lightly golden. |
