PUMPKIN MUFFINS | |
1 can pumpkin 2 c. powdered milk 4-6 tsp. pumpkin spice (depends on your taste) 1 tbsp. cinnamon 6 pkgs. Sugar Twin 6 eggs or use Egg Beaters 1 1/2 c. grated carrot 1 tbsp. baking soda 1 1/4 c. flour 1 c. raisins 1 tbsp. vanilla Mix all ingredients together. Preheat oven to 350 degrees. Use muffin cups sprayed with Pam. Fill 3/4 full and cook 20 minutes. Makes 25 to 30 muffins. Those on Weight Watchers; this is a great snack. 5 muffins a day equals 1 P, 1 B, 1 V, 1 FR, 1 Fat, 1 M. |
