PINEAPPLE UPSIDE DOWN CAKE | |
2/3 c. butter 1 c. brown sugar, packed 12 slices of the ringed pineapple 2 2/3 c. all purpose flour 2 c. sugar 4 tsp. baking soda 1 tsp. salt, optional 2/3 c. soft shortening 1 1/3 c. milk 2 tsp. vanilla 2 eggs Heat oven to 350 degrees. Melt butter in 9 x 13 inch pan. Sprinkle brown sugar evenly over butter. Arrange pineapple on butter-sugar mixture. Decorate with cherries if desired. Stir flour, sugar and salt in mixer bowl. Add shortening, milk and flavoring. Beat 2 minutes at medium speed. Add eggs. Beat 1 minutes. Pour batter over fruit. Bake 60 minutes or until cake springs back when touched with finger. Immediately turn upside-down on serving tray or cookie sheet. Top with whipped cream. |
