ESCALLOPED POTATOES 
6 med. potatoes
1/2 chopped onion
1 c. grated cheese
2 tbsp. cornstarch
Milk
Salt & pepper to taste

Peel and slice potatoes, rinse and drain well. In a 2 quart casserole layer the potatoes, onions and cheese. Stir the cornstarch into 1/2 cup milk. Add salt and pepper. Pour over the potato mixture, add enough milk to cover the potatoes about 2/3 to 3/4. Dot with butter and bake at 350 degrees for about 1 1/2 hours. Bake uncovered the last 20 to 30 minutes.
