BASIC PANCAKE BATTER 
2 c. sifted all-purpose flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
1 egg
1 1/2 c. milk
3 tbsp. oil

Mix all together. Pour 3 tablespoons batter in skillet. Brown on both sides until batter is done.

I used rice flour instead of the wheat flour. Used 1 3/4 cups. Added a bit more sugar to sweeten them up (rice flour is bland). My husband and daughter loved them!

Fluffiest pankakes ever! Yummmmm! I had to use EVOO but halved the amount of oil, added tsp or so of Hershey's cocoa powder and vanilla! Turned out great, even my picky toddler ate them, thanks for the recipe!

I just tried this recipe, it is extremely adjustable & versatile I halved the recipe it made 5 decent sized cakes. I just added blueberries & strawberries & used Whole wheat flour instead of white. Next time I will try spelt flour with raspberries & chopped prunes, anything for a healthy pancake I love this recipe, thank you.

Like others who commented, I was out of Bisquick and my little guy wanted pancakes. I found this recipe and since it got mostly great reviews I went for it. The only thing I added was the 1/2 tsp of Vanilla and he wanted Peanut Butter chips. The pancakes were AWESOME! I noticed someone commented theirs came out runny even though they followed recipe exactly. I would say maybe they think they did, but they must have added too much milk or something. So if you are reading this recipe and aren't sure, go for it. You will not be disappointed!
