SAUTEED SHRIMP AND SCALLOPS | |
1/2 lb. sea scallops 2 slices bacon 1 lb. shrimp, peeled and deveined 1/4 c. sliced green onion Remove tough muscle from scallops. May be done by your fishmonger. Microwave bacon until crispy. Remove and drain on paper towel. Reserve bacon grease. In large skillet, add bacon drippings, heat on high. Add shrimp and scallops to skillet and cook, stirring often, 3 to 5 minutes or until shrimp are pink and scallops are opaque. Add green onions and cook, stirring, 1 minute. Remove to serving platter and pour any remaining drippings over seafood. Sprinkle with crumbled bacon. Serves 4. |
