SUMMER SQUASH CASSEROLE 
4 or 5 sm. straight neck yellow squash
1 med. onion
1/4 lb. or more extra sharp cheddar cheese, grated
4 to 6 slices of bacon

Wash and slice squash (do not peel). Steam or cook slightly in 2 tablespoons water; drain. Crispy fry bacon and crumble. Cook chopped onion in drippings. Drain off all fat. Arrange ingredients in layers in shallow casserole dish with cheese as top layer. Bake at 350 degrees for about 1/2 hour.
