PROVINCETOWN KALE SOUP | |
1 sm. bunch (5-7 leaves) kale, chopped into 1 inch pieces 1 can red kidney beans, about 1 1/2 c., cooked 1/2 lb. linguica sausage 1/2 lb. chourico sausage 1 lg. onion, chopped 4-5 potatoes, cut into 1 inch pieces 1 or 2 carrots, sliced 1 med. can tomatoes 1-2 cloves garlic Cut sausages into small pieces and cook in a frying pan until some of the grease is cooked out. Drain. Cut potatoes, carrots, garlic and onion; place in a stew pot and add about 1 quart of water. Add tomatoes. Cook until potatoes and carrots are getting soft, add kale and kidney beans. Simmer until done; season with salt, pepper, or as desired, to taste. Eat with thick crackers! |
