2 c. sugar 1 c. milk 1/2 tsp. salt 2 sq. chocolate 2 tbsp. butter 1/2 tsp. vanilla Mix the sugar, milk, salt and chocolate in a saucepan and place over low heat. Stir constantly until sugar is dissolved and chocolate is melted. Bring to a boil and continue cooking without stirring until a bit of fudge forms a soft ball and may be handled when dropped in cold water (234-240 degrees). Remove from heat; set pan in a large bowl of cold water. Let stand undisturbed until there is practically no heat in the fudge mixture. Remove from cold water; add butter and vanilla; beat the mixture, working in the butter until mass is creamy and thick. When mixture is thick enough to knead, turn at once on buttered plate. With spatula shape mass into an oblong or square 1 inch thick. Let cool slightly and cut into desired squares. |
