GARDEN MACARONI SALAD 
2 c. cooked whole wheat macaroni, chilled
1/2 c. chopped tart apples
1/2 c. mayonnaise
1 c. freshly shelled lg. green peas (or frozen or canned)
1/2 c. diced celery
2 hard boiled eggs
1 green pepper
Salt & pepper to taste
Crisp lettuce (opt.)

In a large serving bowl, mix together macaroni, apples, mayonnaise, peas, and celery. Dice one egg and half of the green pepper; stir into salad. Taste and add salt and pepper as desired. Slice the other egg; garnish salad with egg slices and diced green pepper. Serve on lettuce leaves if desired.
