MEATLESS BEAN SOUP 
1 1/2 c. dried beans
5 1/2 c. water

Combine in 6-quart saucepan or soup kettle. Let stand overnight. Melt 2 tablespoons butter in small pan. Add and cook until tender: 1/4 c. sliced celery

Add to beans in pan. Pour 1 cup water into small pan. Swish around to rinse pan and pour into bean mixture. Add: 2 tsp. salt 1/4 tsp. hot pepper sauce

Cover and simmer 2 hours. Add 1 cup diced potatoes. Cover and cook until potatoes are tender. Makes 1 1/2 quarts.
