MAMA'S MEATLOAF 
2 tbsp. olive oil
1 c. finely chopped celery
1 c. finely chopped onion
3 cloves garlic, minced
1 tsp. Italian seasoning
1 c. tomato sauce
1/2 c. chopped Italian parsley
1/3 c. chopped fresh basil leaves
1/3 c. bread crumbs
1 1/2 lb. ground chuck beef
1/2 lb. ground pork
Salt and pepper
4 strips bacon

Heat oil in skillet over low heat. Add onion, celery, garlic and Italian seasoning. Cook, covered, stirring occasionally for 15 minutes. Remove to a bowl; cool to room temperature. Preheat oven to 350 degrees. Add tomato sauce, parsley, basil and bread crumbs to cooked mixture. Season with salt and pepper. Gently toss, do not over mix. Lightly grease 9 x 5 x 3 inch loaf pan. Lay bacon on top. Bake 45 minutes.
