MOM'S #1 PEACH SPICE CAKE 
1 can (#2 1/2 size) peaches
2/3 c. shortening
1 1/2 c. sugar
2 1/3 c. flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. ginger spice
1 tsp. cloves
3 eggs, beaten

Drain and mash peaches. Cream shortening, add sugar and mix well. Stir in well beaten eggs and peaches. Add dry ingredients, beat well. Turn into cake pan. (Use tube pan, looks great!) Bake at 375 degrees for 25 to 30 minutes.

Good plain or with plain powdered sugar glaze or cream cheese icing dribbled on top.
