APPLE RAISIN NUT MUFFINS 
4 c. apples, chopped finely with peel left on
1 c. white or brown sugar
2 tsp. vanilla
1/2 c. oil
2 eggs
2 c. flour
2 tsp. cinnamon
3/4 c. chopped raisins, dates or currants
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. chopped nuts

Mix together apples and sugar and let stand. Then mix together vanilla, oil and eggs and add to the apple mixture. Then add all the dry ingredients and raisins and nuts. Mix only enough to blend. Then pour into greased cake pan or muffin tins and bake at 325 degrees for 30 to 35 minutes for cake and less for muffins. Test doneness by inserting toothpick and having it come out clean. Cut bars with sharp knife when cool. Very good and moist.
