ZUCCHINI PIZZIOLA | |
1 lb. zucchini, sliced 3/8 inch thick 1 (6 oz.) can tomato paste 1 clove garlic, halved 1 c. peeled tomatoes 1 tbsp. olive oil 1 tsp. dry basil or 2-3 leaves fresh Salt and pepper to taste Saute tomato paste and garlic in olive oil in large skillet for 3 to 4 minutes over medium heat, stirring. Add to tomatoes; lower heat and simmer 10 to 15 minutes, stirring. Add zucchini and 1 cup water. Simmer 3 to 5 minutes until zucchini is fork tender. Season to taste. |
