CRUNCHY BRAN MUFFINS 
1 1/2 c. shreds of wheat bran cereal
1 c. hot milk
1 c. flour
1/3 c. brown sugar (packed)
1/3 c. butter softened
2 tsp. baking powder
1/4 tsp. salt
1 egg

TOPPING:

1 tbsp. firm butter
2 tbsp. flour
2 tbsp. brown sugar

Preheat oven to 400 degrees. Grease bottom only of 12 muffin pan cups.

Mix cereal and milk. Let stand until softened. Stir in remaining ingredients, except crunchy topping. Batter will be lumpy. Sprinkle with crunchy topping. Bake until golden brown, 18-20 minutes.
