ARTICHOKE NIBBLES 
2 (6 oz.) jars marinated artichoke hearts
1 sm. onion, finely chopped
1 clove garlic, minced
4 eggs
1/4 c. fine dry bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/6 tsp. liquid Tabasco
1/8 tsp. thyme
2 c. (8 oz.) shredded sharp Cheddar
2 tbsp. minced parsley

Drain marinade from 1 jar into a frying pan. Drain other jar and save marinade. Chop all artichokes; set aside.

Heat marinade on medium heat; add onions and garlic, stirring until onion is soft. Beat eggs. Stir in bread crumbs, salt, pepper, oregano, Tabasco, cheese, parsley, artichokes and onion mixture.

Turn onto a greased 7x11 inch pan. Bake at 325 degrees for 30 minutes or until set well.

Makes 6 dozen 1 inch squares.
