HAWAIIAN CHICKEN 
2 pkg. boneless skinless chicken breast
1 lg. green pepper
Juice of 1 lemon
1/2 c. apricot-pineapple preserves
1 c. barbecue sauce
Pepper to taste
White rice

In large frying pan, melt 3 tablespoons butter. Cut chicken into cubes and add to pan. Stir for 5 minutes. Cut green pepper into strips and add to chicken, add pepper to taste. Stir for 2 minutes, then add lemon juice, barbecue sauce, and preserves. Simmer partially covered for 20-25 minutes. Serve on white rice.
