THREE LAYER CARROT CAKE 
2 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/4 c. salad oil
4 eggs
4 c. grated carrots
1 tsp. vanilla
1 c. chopped nuts
8 oz. crushed pineapple (drained)

ICING:

1/2 c. softened butter
1 lb. confectioners sugar
8 oz. softened cream cheesed
1 tsp. vanilla

Preheat oven to 350 degrees. Sift dry ingredients together. Add oil and eggs; beat until thoroughly mixed. Add carrots, vanilla, pineapple, and nuts; mix well. Pour into 3 round cake pans (greased and floured). Bake 30 minutes or until done.

ICING: Mix ingredients together. Spread between each layer and on top.
