1/2 c. shortening
1 1/2 c. all-purpose flour
2 1/2 tsp. baking powder
1 egg
3/4 c. sugar
1/2 tsp. salt
3/4 c. milk
1 1/2 tsp. vanilla

Grease and lightly flour a 9 x 9 x 2 inch baking pan and set aside. Place shortening in small mixer bowl. Add flour, sugar, baking powder, and salt. Add 1/2 the milk, the egg, and vanilla. Mix at low speed until blended. Beat 2 minutes at medium speed, then beat in remaining milk. Beat 2 more minutes at medium speed. Pour into prepared pan and bake at 375 degrees for 25 to 30 minutes. Cool and frost.
