LEMON CHESS PIE 
4 eggs, beaten
2 c. sugar
1/2 c. lemon juice
Essence of 1 lemon (yellow part of rind)
1 1/2 tbsp. flour
1 1/2 tbsp. cornmeal
1/2 stick melted butter
1/3 c. milk

Mix all ingredients together and pour into 9-inch deep dish pie shell. Bake at 370 degrees for approximately 30 minutes.
