CHICKEN COUNTRY STYLE 
1 lg. chicken, quartered
1/3 c. flour
3 tsp. salt
4 tbsp. oil
2 green peppers, cut into strips
6 potatoes, whole
1 bunch carrots, whole
A few stalks celery, whole
6 onions, whole
1 qt. or #2 can tomatoes
1 tbsp. sugar & 1/4 tsp. pepper into tomatoes
1 c. boiling water
4 tbsp. flour & 6 tbsp. cold water (thickening for gravy)

Clean chicken, roll in flour and salt. Brown in fat. Remove pieces and place 2/3 vegetables in bottom of same pan. Lay chicken on top, add remaining veggies and add green pepper on top. Pour tomatoes and water over top. Cover and bake at 400 degrees for 1 hour 45 minutes or 2 hours. Stir in thickening after removing dinner. Pour gravy over chicken. Serve and enjoy.
