BAKED RICE PILAF 
1/2 c. chopped onion
1/2 c. diced green pepper
1/2 lb. mushrooms, sliced
4 tbsp. butter
1 c. brown rice
2 c. beef broth

Saute onion, pepper, and mushrooms in butter. Stir in rice and hot broth. Place in 1 1/2 quart casserole dish. Cover and bake at 375 degrees for 1 hour and 15 minutes.
