POTATO PANCAKES 
4 c. grated potatoes (put into 1/2 c. milk to prevent turning color)
2 tbsp. minced onion
2 eggs, beaten
2 tbsp. sour cream
2 tsp. salt
4 tbsp. flour

Drain potatoes well. Add remaining ingredients. Mix well. Drop as small pancakes in hot fry pan with oil. Fry until brown on each side. Serve with apple sauce and syrup.
