BLACK BOTTOM CUPCAKES 
8 oz. cream cheese
1 egg
1/3 c. sugar
1/8 tsp. salt
6 oz. chocolate chips
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. oil
1 tbsp. vinegar
1 tsp. vanilla

Combine cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt. Beat well. Add chocolate chips. In another bowl combine flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Mix well. Fill muffin cups half full with batter. Add a generous tablespoon of cream cheese/chip mixture. Bake at 350 degrees for 25 minutes. Makes 1 1/2 dozen.
