4 tbsp. butter, softened 1/3 c. light corn syrup 1 tsp. peppermint extract 1/2 tsp. salt 4 3/4 c. sifted powdered sugar (about 1 pound) 1 drop each red and green food coloring Thoroughly blend butter, corn syrup, extract, and salt in large mixing bowl. Add sugar, mix with spoon and hands until blended smooth. Divide mixture in thirds. Knead red coloring into one portion, green coloring into another portion and leave third portion white. Shape in round balls, flatten with tines of fork on waxed paper lined baking sheets. Let dry several hours. Makes 72 mints. |
