CABBAGE ROLLS | |
1 lg. head of cabbage 1 lb. ground beef 1/2 lg. ground pork 1 tbsp. paprika 1 tbsp. salt 1/2 tsp. pepper 2/3 c. oil (Mazola is good) 1 lb. uncooked rice 1 can sauerkraut 2 c. tomato juice Core cabbage head. Place in boiling water. Boil several minutes. Then pull leaves apart. Boil for 5 minutes or until leaves are soft. Put leaves in colander to cool and drain. Meanwhile; mix meat, paprika, salt pepper and oil. Add rice that has been cooked half done. Mix thoroughly with meat. Place a portion of meat mixture in cabbage leave. Fold over one side. Roll up then push in open side with finger. Place in small roaster or baking dish. Take 1 can of kraut, squeeze out juice and spread kraut over cabbage rolls. Pour 2 cups of tomato juice over rolls. Cover with lid and bake at 400 degrees for 45 minutes. Check to be sure rice is done and remove from oven. Instead of adding kraut you can add tomato juice, and boil cabbage rolls in cabbage juice, (water used in boiling cabbage heated), 1 tablespoon vinegar. Cover with additional water if necessary. Cook about 35 minutes. |
