LITE POTATO SALAD 
8 sm. new potatoes
2 cloves fresh garlic, chopped fine
1 med. onion, sliced
2 tomatoes, cubed
1 bunch fresh mint leaves
1 bunch fresh parsley leaves
1/4 c. olive oil
Lemon juice
Salt and pepper to taste

Boil potatoes with skin on until cooked. Cut into cubes. Tear parsley and mint leaves away from stems by hand.

Place all ingredients in a large mixing bowl. Add oil. Sprinkle lemon juice on top, and mix very well.

Add salt and pepper to taste.

Serve with thinly sliced chicken and a red sauce.
