BUTTERSCOTCH COFFEE SQUARES | |
1 1/2 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1 pkg. butterscotch morsels 1 1/2 c. shortening 1 c. firmly packed brown sugar 1 egg 1/2 c. boiling water 1 tsp. instant coffee 1/2 c. chopped pecans In small bowl, combine flour, baking powder, baking soda, salt, and cinnamon; set aside. In large bowl, combine shortening and sugar. Add egg and beat well. In measuring cup, combine boiling water and instant coffee. Gradually blend in flour mixture alternately with dissolved coffee. Stir in butterscotch morsels and 1/2 cup chopped nuts. Spread in greased and floured 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 30-35 minutes. Cool. Cut into 2 inch squares. |
