TACO RICE SUPPER 
1 lb. ground turkey
1 med. onion, chopped
1 (16 oz.) can tomatoes
1 c. uncooked rice
1 pkg. taco seasoning mix
1 (16 oz.) can kidney beans
1 c. shredded cheese
2 c. shredded lettuce

Brown meat and onion, drain fat off. Drain juice from tomatoes and add enough water to equal 2 1/2 cups of liquid. Add tomatoes, liquid, rice, seasoning and kidney beans to meat and onion mixture. Stir and bring to a boil. Reduce heat and cover; simmer 25 minutes, stirring often until liquid is absorbed. Keep pot covered. To serve, top with cheese and lettuce bed.
