4 qts. peeled, chopped tomatoes 2 c. chopped onions 2 c. chopped bell peppers 1 c. sugar 3 tbsp. salt 3 tbsp. mixed pickling spice 1 tbsp. mustard seed 1 tbsp. celery seed 2 1/2 c. vinegar 2 c. chopped hot peppers (more if desired hotter) Combine tomatoes, onions, sweet and hot peppers, sugar and salt. Cook gently 45 minutes. Stir occasionally. Tie spices in cheesecloth bag, add to tomato mixture. Cook until thick, about 1 hour or more. As mixture thickens, stir frequently. Add vinegar and cook slowly until required thickness. Pack into jars with ring and lids and process in hot water bath 15 minutes. |
