BACON STUFFED ROUND STEAK 
6 slices bacon
3 sm. eye of round steaks
1 (8 oz.) can tomato sauce
1/4 c. brown sugar
1/4 c. red wine vinegar
1 tsp. salt
1 bay leaf
1/4 c. flour

Cook bacon until nearly done. Trim any fat from steak and slit horizontally with a sharp knife, creating a pocket. Stuff with bacon pieces. Brown meat on both sides in hot bacon drippings. Transfer meat to a baking dish.

In same skillet, combine tomato sauce, brown sugar, red wine vinegar, salt and bay leaf. Heat and stir until sugar dissolves. Pour 1/2 sauce over meat and bake at 325 degrees until tender, approximately 1 1/2 hours. (Or cook at lower temperature, increase time.) Baste frequently.
