CRANBERRY ISLE, MAINE BLUEBERRY
PIE
 
1 c. sugar
3 tbsp. cornstarch
4 c. blueberries
Water
1 tbsp. butter
1 tbsp. lemon juice
Pie shell
Whipped cream

Fill 1 cup with fresh blueberries, crush down and fill the cup with water to make 1 cup.

In saucepan mix: 1 cup sugar, 3 tablespoons cornstarch, 1 cup blueberries with water (above). Boil in saucepan until thick (approximately 3 minutes).

Take off heat and mix in: 1 tablespoon butter, 1 tablespoon lemon juice. Cool. Add remaining blueberries. Pour into prepared pie shell. Top with whipped cream.
