BAKED MANICOTTI 
DOUGH:

6 eggs
3 c. flour
2 c. milk
1/2 tsp. salt

FILLING:

1 1/2 lbs. ricotta cheese, drained
2 eggs
1/2 c. freshly grated Parmesan cheese
Your favorite tomato sauce

DOUGH: Beat the eggs, add flour, milk and salt and blend well. Drop 1 tablespoon of this batter onto a heated griddle and cook lightly on both sides until golden and set, like a small pancake. Continue until batter is used up.

FILLING: Blend cheeses and eggs for the filling. Place 1 teaspoon or more filling on each manicotti pancake and roll up. Place in a baking dish and spoon warm tomato sauce over each roll. Bake in a 350 degree oven for 30 minutes. Serves 4-6.
