MANICOTTI CHEESE BAKE 
1/2 lb. ground beef
1/2 c. minced onion
1/4 c. chopped green pepper
2/3 c. tomato paste
2 c. water
1 1/2 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. Italian seasoning
8-9 manicotti shells
2 c. (1 lb.) ricotta cheese
1 c. (4 oz.) shredded Mozzarella cheese

Saute meat, onion and green pepper. Drain off fat. Add paste, water, salt, pepper and seasoning. Simmer 15 minutes. Parboil manicotti in salted water 4 minutes. Drain on paper towels. Fill shells with combined ricotta and Mozzarella. Place shells in shallow baking dish. Cover with sauce. Bake in oven, 350 degrees for 20 to 30 minutes. Serves 4.
