MANICOTTI - CHEESE BAKE 
1/2 lb. lean ground beef
1/2 c. onion, minced
1/4 c. green pepper, chopped
2/3 c. tomato paste
1 1/2 tsp. salt
2 c. water
1/2 tsp. pepper
1 tsp. sugar
1 1/2 tsp. Italian seasoning
8 or 9 manicotti shells
2 c. (1 lb.) ricotta cheese
1 c. (4 oz.) Mozzarella cheese, grated

Saute meat, onion, and pepper. Drain off any fat. Add tomato paste, water, and seasonings. Simmer 15 minutes. Parboil manicotti in salted water 4 minutes. Drain on paper towels. Stuff with combined ricotta and Mozzarella. Place in shallow dish. Cover with sauce. Bake at 350 degrees for 20 to 30 minutes. Serves 5.
