ASPARAGUS CASSEROLE 
2 c. canned asparagus, cut into pieces
1 tsp. salt
1/8 tsp. pepper
1 pimento chopped or sm. jar pimento, drained
1 egg, beaten
1 c. grated sharp cheese
1 1/4 c. Ritz cracker crumbs
1 c. milk
1/4 c. melted butter
Paprika
1 can cream of mushroom soup

Mix all ingredients except 1/4 cup cracker crumbs and 1/4 cup butter. Pour into greased 1 1/2 quart casserole dish. Sprinkle remaining cracker crumbs over top and pour melted butter over crumbs. Bake at 350 degrees for 30 minutes. This recipe doubles easily.
