ORANGE SLICE CAKE (FAKE
FRUITCAKE)
 
2 cubes (1 c.) butter
2 c. sugar
4 eggs
1 c. buttermilk
2 tsp. vanilla
3 1/2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1 lb. candy orange slices, cut in small bits
1/2 lb. dates, chopped
1 c. coconut, flaked
1 c. walnuts, chopped

GLAZE:

1 c. orange juice concentrate (undiluted)
2 c. powdered sugar

In large bowl, cream together butter and sugar, 1 cup at a time. Add eggs one at a time. Add vanilla. Mix. Sift salt, flour and soda together. Add alternately with buttermilk. Add orange slices, dates, coconut and nuts. Bake in greased and floured angel food cake pan at 300 degrees for 1 hour and 55 minutes. Check after 1 1/2 hours.

To make glaze, dissolve sugar in the orange juice concentrate. Poke a few holes in top of cake with fork. Pour glaze over cake while cake is still warm. Good!
