ORANGE SLICE FRUITCAKE | |
1 c. butter 2 c. sugar 2 tsp. grated orange rind 4 eggs 1 tsp. baking soda 1/2 c. buttermilk 3 1/2 c. sifted flour 2 c. nuts, chopped 1 lb. candy orange slices, chopped 1/2 lb. dates, chopped 1 c. flaked coconut Cream butter and sugar. Add orange rind; add eggs, one at a time. Dissolve soda in buttermilk. Add alternately with flour. Mix nuts, orange slices, dates, and coconut. Add to creamed mixture. Pour in greased and floured tube cake pan. Bake 1 hour 30 minutes or until done at 300 degrees. GLAZE: 1 c. orange juice 2 c. powdered sugar 2 tsp. grated orange rind Combine all ingredients. Remove cake from oven when done. Pour Glaze over hot cake. Let cake cool in pan. Yield: 20 servings. |
