CREAMY TAPIOCA PUDDING 
1 qt. milk
2 eggs, separated
1/2 tsp. salt
1/2 c. granulated sugar, rounding
1/3 c. minute tapioca
1 tsp. vanilla

Slowly heat 3 cups milk in saucepan. Beat egg whites with about 1/3 of the sugar. Beat yolks in small bowl adding remaining milk and dry ingredients. Add to heating milk and stir frequently. Mixture will thicken as it reaches boiling point. When it forms 2 drops from spoon, add vanilla and pour over the beaten egg whites. Mixture will be thin but thicken as it cools. Stir frequently during cooling.
