CARROT CAKE RING 
4 lg. eggs
2 c. sugar
1 1/4 c. Wesson oil
1 tsp. vanilla extract
3/4 c. applesauce
3 c. all-purpose flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
2 c. grated carrots (about 5 carrots)
1 c. chopped walnuts
3/4 oz. can flaked coconut

Break eggs in bowl and beat until light. Add sugar and oil and beat. Add applesauce and vanilla. Add flour, salt, cinnamon, baking powder and soda. Beat, then add carrots, walnuts, coconut and beat. Preheat oven to 350 degrees. Grease and flour 10" tube pan. Bake 1 hour or until pick inserted in center of cake comes out clean.
