SOPAPILLAS 
2 c. flour
1/2 tsp. salt
3 tbsp. sugar
2 1/2 tsp. baking powder
2 tbsp. lard or shortening
3/4 c. warm water
Oil for frying

Sift flour, salt, sugar and baking powder together. Cut in the lard until the mixture looks like coarse oatmeal. Gradually add water, mixing until you have a stiff dough. Add more flour if necessary.

Turn out the dough on a floured board. Knead 3 to 4 minutes until it is smooth. Cover and set aside for 30 minutes. Roll out the dough on a floured board to 1/4 inch thickness. cut into 2 inch squares. Heat 2 inches of oil in a heavy saucepan to 385 degrees. Drop squares of dough into oil and fry, turning several times until golden brown. Drain on paper towels. Sprinkle with powdered sugar, cinnamon and sugar or serve warm with honey. 2 dozen.
