NO-COOK MINT PATTIES 
1/3 c. light corn syrup
1/4 c. softened butter
1 tsp. peppermint extract
1/2 tsp. salt
1 lb. (4 3/4 c.) sifted powdered sugar
Red & green food coloring

Blend corn syrup, butter, extract and salt. Add sugar. Mix with spoon and hands until smooth and pliable but not runny. Add more sugar if necessary. Divide into thirds. Knead 1 drop of red food coloring into 1/3, 1 drop green into 1/3 and leave the rest white. Shape into small balls. Flatten with fork on foil. Let dry several hours. Makes approximately 72 patties.
