ESCALLOPED CHICKEN 
4 c. chopped celery
2 med. onions, chopped
1 gallon water
1/2 c. chicken base
3 tbsp. poultry seasoning
1/2 (5 lb.) turkey roll, diced sm.
1 gallon turkey gravy
4 loaves bread, cubed
1/2 c. parsley flakes

Combine first 5 ingredients and simmer until vegetables are tender. Combine bread cubes and turkey cubes; add vegetables/broth mixture and parsley. Pour into deep full insert sprayed with Pam. Bake at 325 degrees for approximately 2 hours; serve with turkey gravy over. Serves 50 to 60.
