IMPOSSIBLE VEGETABLE PIE 
2 c. chopped broccoli or cauliflower or asparagus
1 c. shredded Cheddar cheese
1/2 c. chopped onion
1/2 c. chopped green pepper (optional)
1 1/2 c. milk
3 eggs
3/4 c. Bisquick baking mix
1/2 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Heat 1 inch salted water to boiling. Add broccoli, cover and cook or steam until almost tender, about 5 minutes, and drain.

Mix broccoli, cheese, onion and green pepper in large 10-inch pie plate or 9x12 inch oblong baking dish. Beat remaining ingredients in blender until smooth. Pour over vegetable. Bake until knife inserted in center comes out clean, about 35 to 40 minutes. Serves 6.
