IMPOSSIBLE VEGETABLE PIE 
2 c. chopped fresh broccoli (or 10 oz. frozen chopped broccoli)
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. shredded Cheddar cheese (about 4 oz.)
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Cook broccoli until almost tender. Mix broccoli, onion, pepper and cheese in lightly greased 10 x 1 1/2 inch pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater.

Pour into pie plate. Bake at 400 degrees until golden brown and knife inserted halfway between center and edge comes out clean, about 35-40 minutes. Let stand 5 minutes before cutting.
