SPINACH AND ARTICHOKE CASSEROLE 
1 (14 oz.) can artichoke hearts
3 (10 oz.) pkgs. chopped frozen spinach (defrosted)
1/2 lb. cream cheese
2 tbsp. mayonnaise
4 tbsp. butter or olive oil
6 tbsp. milk
1/3 c. Parmesan or Romano cheese

Drain artichokes and place in casserole dish. Squeeze moisture out of the spinach and place atop the artichokes. Blend cream cheese, mayonnaise, oil and milk with an electric mixer and spread over the spinach. Sprinkle top with cheese and black pepper. Bake uncovered at 375 degrees for approximately 40 minutes.
