SPINACH SALAD 
1 lb. fresh spinach
5 slices bacon
3 green onions, sliced
1 red apple, diced

DRESSING:

1/3 c. salad oil
3 tbsp. tarragon vinegar
1 tsp. sugar
1/2 tsp. dry mustard
1/8 tsp. salt & pepper

Wash spinach and wrap in damp towel and chill 2 hours. Fry bacon until crisp and crumble. Saute almonds in a little bacon grease and drain. Mix dressing ingredients together. When ready to serve, toss all together.
