PUMPKIN ROLL 
3 eggs
1 c. sugar
3/4 c. pumpkin
3/4 c. flour
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
Nuts, chopped

FILLING:

1 (8 oz.) pkg. cream cheese
1 c. powdered sugar
2 tbsp. butter
2 tsp. vanilla

Beat eggs at medium speed for 5 minutes. Add sugar and beat together. Stir in pumpkin, flour, cinnamon, nutmeg, and ginger. Mix well. Add nuts. Pour into a greased large cookie sheet or jelly roll pan. Bake at 350 degrees for 15 minutes. Turn out on a dampened tea towel and roll up like a jelly roll. Cool for 30 minutes. Unroll and spread filling on. Roll it up again.

FILLING: Mix cream cheese, sugar, butter, and vanilla until fluffy.
